German Rouladen

8 oz london broil8 slices bacon8 dill pickle slices1 large onion, slice4 tbsp spicy brown mustard1-1/2 cups beef broth1 tbsp olive oil
Start with getting the london broil sliced at the meat counter. Pick a steak that is about 1" thick. The result will be 4 1/4" slices, about 3x6.
Spread 1 tbsp of mustard on each beef slice. Lay 2 slices of bacon and 2 pickle slices on each. Distribute onion evenly between all 4 beef slices. Starting from the smallest end, roll each, jelly roll style. Secure rolls with either kitchen twine or toothpicks.
Heat dutch oven, adding oil to pan. Brown the meat rolls well on all side. Reduce heat to low, add broth to pan. Cover and simmer for 60-75 minutes, or until meat is tender. Remove rolls from pan. Mix 1 tbsp cornstarch with 1/2 cup cold water. Stir into remaining liquid. Stir until slightly thickened. Serve over beef rolls.
