Carob Cookie Cake

Ingredients

1 1/4 C Water (warm/hot)1 C Cashews3/4 C Pitted dates2 tsp Vanilla1/2 tsp Salt1 1/4 C Whole wheat pastry flour or white flour2 C Vegan carob chips
Blend first 5 ingredients until really smooth.
Take out of blender and add flour. Mix well.
Melt 1 C of carob chips and add to above mixture.
Add rest of carobs whole. Put mixture in 8 X 8 glass baking pan.
Cook on 350 degrees for 20 - 30 minutes as a cake until nothing is on a tooth pick when testing. Make sure it does not burn.
Cooking time would be less for cookies.
Makes 9 square pieces. Yum! Great with non-dairy ice cream.
