Shrimp Scampi

Ingredients
1 T canola oil3/4 Lb uncooked shrimp, peeled and deveined1 med green onion, diced1/4 tsp garlic powder1/2 tsp basil3/4 tsp parsley1 T lemon juice3 T parmesan cheese
Directions
In 10" skillet, heat oil over medium high heat. Add shrimp and all ingredients. Cook 3-7 minutes (depends on size of shrimp, smaller shrimp cook faster.) Remove from heat; sprinkle with Parmesan cheese. Serving size=1/4 of shrimp. To make dividing it up easier, spread out the shrimp and divide the pan into quarters, each quarter is a serving.

Tip: remember C & O...when the shrimp are shaped like a "C" they are cooked, when they look like an "O" they're overcooked.

    I used Olive oil and Ghee as a replacement for canola oil and used fresh Basil, Parsley and fresh grated Parmesan. Was amazing. Then stirred in some bowtie noodles and sprinkled additional freshly grated Parmesan on top before serving. It was awesome - 2/11/20
