Peanut Butter Pancakes (low carb)

Ingredients
1-1/4 cup flour2 Tbsp baking powder2 Tbsp sugar 1/2 tsp salt1/2 cup peanut butter (melted)2 Tbsp canola oil1 egg (whisked together with the milk first)3/4 cup milk1 cup water..............Spread each pancake with 2 tsp peanut butter and 1 tbsp pressurized whipped cream instead of butter & syrup (included in nutrition facts).
Directions
1 - Whisk together all ingredients and let set for 5 min.

2 - Cook on pancake griddle (375*) with non-stick cooking spray, using a scant 1/4 cup of batter per pancake.

3 - Serve with peanut butter and whipped cream.

Opt: You can also spread with 1/2 tsp of hot fudge topping and some shaved chocolate (not calculated in nutrition facts, but they add a surprisingly small amount of additional calories and carbs.)

Makes approx. 16 pancakes.
