Vegan Oatmeal Black Bean Burgers

1 carrot peeled1/4 onion1 14.5 oz can of diced tomatoes3 cups raw baby spinach1 15 oz can of black beans, drained and rinsed1 T onion powder1 T garlic powder3 cups whole oats
Preheat electric griddle to 400� F.
In a food processor chop the carrot and onion until finely minced. Add the undrained can of tomatoes and process to combine. In small batches add spinach and process until minced. Add the drained black beans, onion powder and garlic powder and process until smooth. Place the oats in a bowl, add the processed vegetable mixture and stir by hand to combine. Let mixture rest 2 minutes to hydrate the oatmeal.
Scoop by 1/3 cups onto preheated flat electric griddle. Cook for five minutes, flip and cook another five minutes. Burgers can also be cooked in a non-stick pan. Or cover and baking sheet with non-stick foil and bake in the oven at 400� for 10 minutes, flip over and broil for 2 minutes.
