Cucumber & Onion Salad

Ingredients
2 small cucumbers, unpeeled and thinly sliced1 medium red or white onion, thinly slicedFor the Dressing:2 tablespoons EVOO2 tablespoons Alessi® Orange Blossom Honey Balsamic Vinegar2 teaspoons Splenda1 teaspoon Gourmet Sea SaltPepper, to taste
Directions
1. In a medium bowl, combine cucumber slices and onion slices; set aside.
2. In a small bowl combine remaining ingredients to make the salad dressing.
3. Add the salad dressing to cucumber/onions and toss well.
4. Cover and refrigerate for up to 2 hours.
