Banana Nut Granola

Ingredients
1 cup raw almonds1 small ripe banana1/2 cup brown rice syrup (or honey or maple syrup) 3 cups barley flakes 5 cups old-fashioned oats (or all oats)1/2 cup ground flaxseed 1/2 cup unsweetened coconut (optional)1 tablespoon ground cinnamon
Directions
Preheat oven to 350°F.

Place the almonds in a food processor and process until finely ground, about two minutes. Add banana and syrup and process for a minute, until ingredients are smooth and pourable.

Place oats and barley in a large bowl, then pour on the banana mixture. Mix well.

Spread on a baking sheet and bake for 30 minutes, stirring every 10 minutes.

Makes 16 1/2 cup servings.

    Good, but in my opinion the syrup useless and adds too much calories. Bananas and almonds are superfoods so important for our wellbeing and at the same time taste delicious by themeselves. We crave too much sweets, our tastes needs to get educated again to natural food. - 8/29/11

    I haven't tried this recipe yet, but wanted to post a reminder that only 100% maple syrup is real maple syrup. Be sure to read the ingredients on any sugar free or maple flavored syrups such as Log Cabin, Mrs. Butterworth, store brands, etc. They are made of sugar, chemicals, and flavorings. - 2/5/13

    If you're counting carbs, you could use sugar free maple syrup - my local Walmart sells sugar free IHop pancake syrup! Unsweetened applesauce might be better than the bananna and it wouldn't be as sweet. - 4/26/12

    Great granola recipe! Loved the addition of a banana. I just chopped pecans and almonds and left out the barley and flax seed as I didn't have any. Also, used honey and it came out wonderful! - 1/11/12

    Good recipe, I love making my own granola. I tried yours but cut the added sugar. One could also try cutting the sugar and swapping in pecans or pumpkin seeds since they tend to help with the sweet tooth. - 3/7/12

    i had no bran flakes and instead substituted them with 1/2 cut of ground quinoa. I also added extra cinnamon and a half cup of splenda.

    Very good! I used all oats and honey and skipped the coconut because I didn't have any on hand. It needs just a little something. I think I'll try adding the coconut next time - maybe that's it. :) I made this to replace store-bought cereal for my kids and this is a great starting point! - 6/8/12

    This looks great. Question, though: ground flaxseed is supposed to be refrigerated instead of stored on the shelf. Does this granola need to be refrigerated, then? Or maybe the flaxseed should be ground & added just before eating? - 8/23/11

    Recently I consulted with a dietician. I learned weight control, weight loss, blood sugar control is all about the carbs. This recipe is y high in carbs (suggested 30-45 carbs per meal, 15-30 carbs in each of two snacks daily). I wouldn't even consider adding this to my recipe file. - 9/18/15
