Egg & Cottage Cheese 'Muffins'

Ingredients
1 cup 2% fat cottage cheese1 cup egg beaters1/2 onion, finely chopped1 Tbsp chives, finely chopped1/2 cup red bell pepper, finely choppedsalt & pepper to taste
Directions
Mix all ingredients well and pour into muffin pan sprayed well with cooking spray. Bake at 350 degrees 30 minutes or until set and slightly browned around the edges.
