Turkey & whole wheat Penne casserole

Ingredients
1 Box of Penne1 lb of turkey1 can of crushed tomatoes2 tbsp of tomatoe paste3 garlic cloves1 medium onion1 tbsp of olive oil1/2 cup of cheddar.1 tbsp of fresh oregano1 cube of concentrate basil pesto2/ 3 cup of chicken broth
Directions
Cook chopped onion and garlic in pot with oil until translucent, Lightly season with salt and pepper to help get the acids out of the onion
Add Turkey and cook until no longer pink
Add tomatoes, tomatoe paste, chicken broth and all the seasoning and bring to a boil
Reduce heat and simmer covered for 30 minutes until the sauce thickens.
Add salt and pepper to taste
Meanwhile cook pasta as per directions
Mix sauce & pasta and put in a large casserole.
Top with cheese.
Cook at 325 for approx 30 minutes
(This recipe freezes well and can be made ahead of time.)
