Stevia Banana Bread/Muffins

1/2 c. butter2 eggs1 cup buttermilk2 cups spelt flour2 tsp baking powder3/4 tsp baking soda1/2 tsp salt3 bananas1/2 c. applesauce, unsweetened1 tsp vanilla1 tsp cinnamon1/4 tsp steviosideoptional:1/4 c. flaxseed, ground1/4-1/2 cup chopped nuts (both add extra calories, recipe calculated with flax but not nuts)
soak flour in buttermilk overnight at room temp
next morning, mix stevia, baking powder and soda, salt, and a little bit of flour (plus flaxseed if desired). set aside.
Mix mashed bananas, beaten eggs, softened butter, applesauce, and vanilla. Incorporate into flour/buttermilk. Whisk in stevia mixture just until mixed.
bake in greased loaf pans, fluted pan, or muffin pan at 350 (1 hour or so for loaf and fluted pans, less for muffins)
