Chicken with Mustard Yogurt Sauce

Ingredients
2 tbsp olive oil1 medium onion, chopped1.5 lbs chicken breasts cut into strips6 oz Fage Greek yogurt1/4 cup Dijon mustard1 cup fat free chicken brothSalt and pepper to tasteParsley, chopped for garnish (optional)
Directions
Heat the oil in a skillet and add the onion. Sautee until browned about 5-10 minutes. Add the chicken, season with salt and pepper and brown on both sides. Reduce heat and let cook for 10 minutes, stirring occasionally. In the meantime, whick together the yogurt, mustard and broth. Pour over chicken and simmer for 10 minutes. Make sure the sauce does not boil or the yogurt will curdle. Serve over brown rice or with mashed potatoes/cauliflower.

    Easy and quick and absolutely delicious! Because I can't have vngear, I used mustard seeds (both ground and whole) and lemon juice instead of the Dijon mustard and it came out great! - 3/7/10

    Whoever comment that it is honey mustardy must have used the honey flavored yogurt. I didn't care for the sauce but having remembered the comment I added honey - it was a slight improvement. Sauce is thin when cooked according to recipe - try cooking longer like other suggested-I didn't have time - 5/27/10
