Ingredients
Ingredients: * Yellow Sweet Corn, Frozen, 1 cup kernels * Bush's, Black Beans, 1.5 cup * *Del Monte Petite Cut Diced Tomatoes, 1.5 cup * *Perdue Boneless Chicken Breast (perfect portion), 9 oz (remove) * *Perdue Perfect Portion Chicken Breast-Plain 2 serving * Jalapeno Peppers, 1 pepper * Regular Beer, 12 fl oz * Swanson Chicken Broth 99% Fat Free, 1 cup * Chili powder, 1 tbsp * *Cumin Seed, Ground (1Tbsp), 1 tbsp * *Garlic (fresh, raw, 1 clove), 3 serving * *BELL PEPPER (RED), 1 serving * *fresh onion, 0.5 cup fresh cilantro
Directions
Cook chicken according to package directions, cut into bite size pieces, set aside. Saute onion, garlic and peppers. Add spices to vegetables, then combine all ingredients in a medium pot and simmer for 45 min. Season with salt and pepper, and garnish with chopped cilantro.
