Banana Blueberry Muffins

Ingredients
1/2 cup all-purpose flour1/2 cup whole wheat flour1 tablespoon baking powder1/2 teaspoon baking soda1/4 teaspoon salt2 medium mashed ripe banana1/4 cup white sugar1/4 cup yogurt1 egg1/2 teaspoon vanilla extract1 Tbsp lemon juice1 cup blueberries
Directions
Preheat oven to 350 degrees F (175 degrees C).

Mix together flours, baking powder, baking soda and salt.

In a separate bowl, beat together banana, sugar, egg, vanilla. Stir in the yogurt and lemon juice.

Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

Bake in preheated oven for 20 minutes, or until muffins spring back from a light touch. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

    Excellent recipe! Easy to make, smell delicious while baking, and not too sweet! Perfect with a bit of jam. Went perfectly with my blueberry smoothie this morning! I was able to get 12 mid-size muffins out of this recipe. I used large (frozen) blueberries. Will definitely be trying them again! :) - 8/2/14
