Ingredients
2 Orange2 Lemon1/4 cup dried CousCous1/4 - 1/2 cup plain unsweeten yoghut1/4 cup chopped dried apricots1/4 cup whole blanched almonds1/2 apple, choppedHoney to taste
Directions
Juice the oranges and lemons. Add water to make up to 1/2 cup liquid. Heat in microwave for approximately 1 1/2 min (you want it to be boiling). Add the couscous and leave to sit until all the liquid is absorbed (3-5 mins).

Fluff the couscous with a fork and add the dried apricots, almonds and apple. Mix well.

Searve with a yoghurt on top and some honey to taste.

Makes 2 servings.
