Stuffed Chicken Breast

Ingredients
4 oz boneless, skinless chicken breast1 oz reduced fat swiss cheese or 1 oz pepper jack cheese1 oz canadian bacon1 large mushroom (or 3-4 slices)1 slice thick cut bacon
Directions
Cut 'pocket' in chicken breast
put cheese, canadian bacon and mushrooms
in pocket..
Wrap Chicken breast with bacon slice

Grill on 'George Foreman' 10-15 min or until juices run clear

    This was delicious! I substituted the mushrooms for 1/4 cup chopped fresh baby spinach and used colby jack cheese, then cooked it on the grill outside, this was a hit with the whole family! - 6/22/08

    It was really yummy. It had so much flavor, it almost tasted like I was eating 4 ounces of bacon.........I just printed off he recipe bought the ingredients and my husband did the cooking while I took the kids to swimming lessons.
