RADISHES WITH COCONUT BUTTER

One cup sliced radishes.1 tablespoon coconut oil1/2 tablespoon dried minced onions
The best way to make this is by preparing the "coconut butter" in advance, but I've mixed it and eaten it one batch at a time too.
place 1/2 cup coconut oil in a microwave safe dish. Heat for 30 seconds at a time until the oil has melted.
Add minced onions, sea salt, pepper and any other spices that you like.
Pour mixture into a container with a lid then let the coconut oil sit at room temperature for a couple of hours, this allows the onions to soften slightly.
Once it has "hardened" use one tablespoon and spread on to sliced radishes.
Although the fat content is high you must remember that the body treats coconut oil as a carbohydrate not a fat. In other words it goes straight to the liver where it is processed as energy rather than stored as fat.
