Chicken Salad Boats

Ingredients
4 celery stalks4 oz of Chicken cooked breast (about half a large breast of one small one), chopped into small pieces1 green onion, thinly sliced1.5 - 2 tbls reduced fat or fat free mayo1 tsp dijon mustard (optional)salt to tastepepper to taste
Directions
Throw the chopped chicken pieces and green onion into a bowl. Add the mayo, dijon mustard if using and mix until well combined. Add Salt and pepper to your taste preferences. Spread mixture on the celery sticks and cut into thirds.

Serve immediately or store in airtight container in the refrigerator.

Makes one meals size serving or 2 snack sized servings
