Penne Pasta

Ingredients
2 chicken breasts8 oz. penne pasta, cooked6 cups water6 tsp. chicken soup base1 med. onion, rings5 cloves garlic1 large can whole tomatoes8 oz. mozerella cheesered pepper, to taste2 Tbl. parsley, dried1/3 tsp. garlic salt
Directions
Bring to boil water and chicken soup base, add chicken and boil for 10-12 minutes or until chicken is no longer pink.

In a large saute pan, saute onion in olive oil until translucent and then add garlic to roast, approx 30 seconds.

Add tomatoes, pepper, parsley and garlic sat, simmer 20 minutes.

Meanwhile, start cooking pasta.

Cut chicken into bite-sized cubes and add to tomatoe mixture along with 2 oz. of the cheese.

When pasta is cooked, add to tomatoe mixture and stir together. Sprinkle remaining cheese on top, cover and let rest for 5 minutes or until cheese is melted.
