1.5 Cups Hyvee Enriched Bran Flakes1 cup mashed bananas (about 3 medium bananas)1 cup whole wheat flour1 cup vanilla light soy milk3 Tbs olive oil1 large egg1/8 cup brown sugar1/8 cup splenda blend1/2 tsp baking soda2 tsp baking powder1/8 tsp nutmegdash of cinnamon
Preheat oven to 400 degrees and grease or line 12 cupcake pan.
Mix cereal, banana, milk, olive oil, and egg in a bowl well. Let stand 5 minutes.
In a seperate bowl mix flour, sugar, baking soda, baking powder, nutmeg, and cinnamon. Add cereal mixture and stir until blended.
Separate evenly into pan. Bake for 20 to 25 minutes you can stick and toothpick in the middle and it comes out clean.
