Thick & Hearty Chipotle Tomato Soup

1 Tbsp light butter1 onion, diced2 cloves garlic minced1 can condensed tomato soup, low sodium1 can chilli style diced tomatoes1 can corn, no salt added, drained1 can black beans, drained and rinsed1 can vegetarian vegetable broth3-4 chipotle peppers, seeded, and finely chopped (like a paste)
Melt light butter in a dutch oven or large pot. Saute the onion until translucent. Add the garlic and saute 1 minute more. Add the drained corn and saute 1-2 minutes. Add the soup, tomatoes, black beans, and broth. Bring to a boil. Simmer for 10 minutes. Add the chipotle peppers/paste. Simmer for 5 more minutes.
I like to puree about half of the soup for a more liquid consistency. Top with fat free sour cream, reduced fat cheese, and/or crush tortilla chips.
