Better Banana-Raisin Oatmeal Muffin

Ingredients
1 cup whole wheat flour1 tsp baking powder1 tsp baking soda 1 tsp cinnamon1 cup oats1/2 cup raisins1 egg1/4 cup unsweetened applesauce1/3 cup brown sugar1 cup mashed ripe banans1 tsp vanilla
Directions
Makes 12 muffins - grease muffin tin and preheat oven to 400 degrees F.

1. In small bowl, combine flour, baking powder, baking soda and cinnamon.
2. In a larger bowl, combine egg, applesauce, mashed banana, vanilla and brown sugar. Stir well.
3. Add flour mixture to liquids and stir enough to moisten; add oats and raisins.
4. Pour into prepared muffin tin. Bake for 20-25 minutes.

    I didn' use raisins, vanilla, and subbed brown for whie sugar (it's what I had)

    This was an easy quick, and pretty healthy recipe. I would lke to make them again and try raw sugar, vanilla, nutmeg, raisins, and walnuts.

    I'm not much of a muffin person but these are great! I put in 1/4 of walnuts instead of the raisins. Next time I think I will add a little more cinnamon, and bananas and try a little nutmeg as well. - 4/20/08

    I added chopped walnuts, nutmeg, and a little more applesauce since the batter looked a little dense. They were a little bland. Next time I'm going to try 1/2 cup brown sugar and see if that adds a little more flavor. They're still pretty good. - 8/22/12

    Texture seemed off to me and a bit tough. Flavor was good though as I added more cinnamon. When they soften up a bit as they cool, I am hoping texture improves. - 1/5/12

    Too bland and the texture wasn't right, very dense and gummy. I'm assuming this is due to using the applesauce in baking but maybe I didn't do something right? Either way I think I'll look for another recipe. - 7/27/11

    Very easy and tasty. I used 2 tsp cinnamon, and mixed berry applesauce (it's what I had handy). Also, baked at 350 for 20 minutes in the toaster oven because it's too hot to turn on the oven!!! - 6/21/10
