Cream of Broccoli Soup (low fat)

Ingredients
Broccoli Florets 2 cOnion, Yellow 1/2 - slicedGarlic - 1 clove - leave wholeChicken Broth - low sodium/reduced fat - 4 cMilk 1% - 2 cCornstarch - 1/2 c (may vary)Salt - to tastePepper - 1 tsp
Directions
Remember salt to taste. Cook everything in one pot, turn off burner cool down. The onion, just slice. You can leave the garlic clove whole. Cook until everything is tender. Puree in blender or food processor. Pour back in pot and bring to medium heat; slow boil. Stir with french whip. You may want to add more cornstarch for thickening. Be sure to mix a Tablespoon of cornstarch and COLD water and mix back with soup until desired consistency. It is awesome!!! Makes about 6 cups.

    Hi Buffy. Hmmm I thought I did. Let me check this. I made a few changes/additions and kept resubmitting. Maybe the changes haven't all caught up yet. Thank you for checking out my recipe. This soup is a real comfort food. :-)
