Braised Quinoa with Mushrooms

1 c Quinoa2 c water1/4 cup vegetable brothpinch sea salt2 Tbsp olive oil2 shallots, minced1 tsp dried basil 2 Tbsp tamari sauce1 cup sliced mushrooms1/2 tsp fennel seed1/4 cup fresh cilantro or basil for garnish
Place 1 cup red quinoa and 2 cups water in a 1.5 quart saucepan and bring to boil. Reduce to simmer cover and cook until all water is absorbed (about 15 minutes).
Warm a heavy bottomed skillet. Add olive oil and minced shallots, cook slowly until shallots are clear, soft, and beginning to brown. Add mushrooms, toss well, cook until mushrooms are dark in color. Add cooked quinoa, mix well. When grain is thoroughly heated and may be sticking slightly to the pan, add vegetable broth, stir, add soy sauce & stir. Cover for a few minutes. Toss in fennel & basil or cilantro
