Dirty Yellow Rice

*Mahatma saffron yellow rice, 10 oz (2 packages)*Lean Ground Sirloin 10% Fat, 32 oz Water, tap, 2.66 cup (8 fl oz) Olive Oil, 2 tbsp Onions, raw, 2 medium
1. Prepare the yellow rice according to package instructions. Two and two-thirds cups water is appropriate when doubling. Substitute olive oil for the "tub margarine" that the original instructions call for.
2. Combine ground beef and chopped onions. Brown the ground beef mixture while the rice is cooking.
3. When rice and ground beef are finished, combine them.
I usually season the ground beef with a season salt to keep the meat mixture from being too bland.
Makes 8 1-cup servings. Recipe can easily be halved.
