12 boneless, skinless chicken thighs3 onions chopped3 TB butter2 cans diced tomatoes1 TB dried cilantro2 tsp dried tyme2 tsp dried basilpepper to taste
1.Place chicken in large pot with just enough water to cover the chicken. Boil over high heat for 15 minutes.
2. Remove pot from heat and pour water/juice into another container and reserve 1 cup for later.
3. Add butter to pot and place on medium heat. Turn chicken frequently until browned on both sides.
4. Pour 1 cup reserved water/juice back into pot and add chopped onions. Heat to a simmer over medium heat and simmer for an additional 10 minutes.
5. Add tomatoes and continue to simmer another 10 minutes.
6. Add all herbs and spices and simmer 10 minutes longer.
Serves well with rice.
