Thai Peanut Chicken (slow cooker)

Ingredients
1 lb Boneless, Skinless Chicken Breast¾ cup Salsa2 tbsp Lime Juice1 tbsp Soy Sauce1 tsp Ginger Root, grated¼ cup Peanuts, chopped½ cup Peanut Butter2 tbsp Cilantro, chopped
Directions
Mix all ingredients together except chicken and cilantro. Place chicken breasts in slow cooker and cover with peanut butter mixture.

Cook on low for 4 hours.

Sprinkle chicken with cilantro before serving.

    One of my now favorite meals! I added ~1/4 cup water to keep it moist (didn't have greek yogurt on hand) and used 1/2 tsp ginger because it was ground. I am a big fan of Thai peanut sauce and salsa separately, so this tastes AMAZING! I served it over brown rice and used medium/hot salsa for a kick. - 1/31/11

    I tried this recipe today, and I was pretty skeptical based on the peanut butter, salsa, soy sauce combination, but I thought I would give it a try. I did make some adaptations, I added red pepper flakes for heat and chicken broth for moist meat and it was GREAT! I also Cooked noodles to go with. - 1/13/11
