Salmon with Soy Sauce

1/2 c. saki1/4 c. soy sauce1/4 c. rice vinegar1 Tbsp. fresh ginger, finely grated1/2 c. honey1 Tbsp. lime juice4 6-oz. salmon filets
To make marinade: Combine 2 Tbsp. of soy sauce, vinegar, and ginger in a shallow dish. Add salmon filets, skin side up, and marinate, covered, at room temperature for 10 minutes. In a non-stick skillet, place the salmon skin side down over medium heat, covered; keep the marinade.
For sauce: Combine two tablespoons of soy sauce, honey, and lime juice with the marinade and simmer over medium heat, stirring frequently, until thicked, about 4 minutes. Spoon sauce over fillets.
