Quiche base

Ingredients
6 ounces Mozzarella cheese, shredded1/2 cup chopped onions1/2 tsp salt1/2 tsp pepper3 eggs, scrambled2 cups milk (can use half and half or heavy cream)
Directions
Prepare a bottom crust in a 9 inch pie plate. Arrange the cheese on the bottom. Sautee the onions with salt and pepper (here you can add mushrooms), then place on top of cheese. If desired, you can add vegetables and/or meats at this point. If adding vegetables, you will want to blanch them slightly first. Scramble the egg and add milk to it. Then pour the contents on top of the pie. Bake for 45 minutes to an hour and 15 minutes, depending on the ingredients. Once at 45 minutes, check every ten minutes until fork inserted in center comes out clean.

    there's no temperature listed on this recipe. Otherwise, the base used the perfect amount of egg and milk mixture to fill up a 9' pie dish, even with a ton of stuff thrown in. - 9/23/09
