Microwave Herbed Parmesan Flax Bread

1/4 cup Ground Flaxseed/Flax meal1/4 teaspoon baking powder1 1/2 tsp. zatar or other spice blend (zatar is middle eastern)1 Tablespoon butter or coconut oil1 egg or egg whites1/2 tsp. Trader Joe's Lemon Pepper1 tablespoon fresh shredded parmesan
I make this in a small round cereal bowl, but you can experiment and use different shaped ones. Don't make it in anything plastic, though, so as not to get harmful BPA into your food.
METHOD:
Melt butter or oil in dish - 30 seconds on high but cover it. Beat in egg. Add dry ingredients that you have mixed together separately (I do it in the measuring cup). Mix throughly with a fork. Cover cup with glad wrap, cut a small slit in wrap. Microwave on high for about 1 minute 30 secs. Microwaves may vary. Check on it. Do not over cook. You can always toast it later but it will toughen if overcooked. Flip out to cool and wash out dish, as the residue gets really hard to clean if left to dry.
This is not like the flaxseed muffins, this is a "bread". You could use it as a sandwich, bun for burgers, or just to go with a meal. This is WAY better than any mix recipe I have ever tried. The texture is like a fluffy wholegrain bread. I have made french toast out of this, Sandwiches, Grilled Cheese Sandwiches etc... ENJOY HAVING BREAD AGAIN!

I had nothing that resembled bread in my kitchen. Needed to get a fix, this is pretty good! Wish it had less fat, will try to reduce the fat in next batch to test it out. But Yummy really!! - 9/5/10

Glad you liked the recipe, Vicki - FYI this is a low carb, gluten free recipe, and it's full of healthy fats (mostly from flax) so those of us who do low carb really don't want to eat low fat. In fact, I usually work at increasing the fat percentage in my diet as I lose faster that way! :-)
