Vegetable marrow stuffed with chicken

860g (5 large) vegetable marrows400g minced chicken breast 70g (1 large) onion110g bacon150g mushroom 2 eggs 30g romano cheese 15g parsley 20g romano cheese (for top)
Wash vegetable marrow and cut in half.
Scoop out the pulp and reserve.
Chop onion and fry in 1 tbsp of oil , add finely chopped bacon and minced chicken.
Meanwhile finely chop veg. marrow pulp and add to pan.
Continue cooking for 10 minutes until mixture is cooked .
Lower heat ,add chopped mushrooms,finely cut
parsley and cheese.
Add eggs and stir .
Remove from heat and let cool a bit before filling
veg. marrows.
Place in a lightly oiled oven dish and sprinkle some cheese on top .
Bake in oven 200 degrees C for app 20 minutes or until veg. marrow is soft.
Makes 5 portions. = 2 haves each
