Ingredients
Cauliflower, raw, 3.5 cup Butter Spray, I Can't Believe It's Not Butter, 25 sprays, 2 tsp *Skim Milk, .25 cup Fat Free Sour Cream, .66 tbsp (2 tsp)Cream Cheese, Publix Fat Free, 1 tbsp Molly McButter, 1tsp, if desired
Directions
Cut up half of a head of cauliflower (about 3-4 cups). Spray with butter spray, put a little water in the bottom of the dish, and microwave, covered, for 3-5 minutes (I did 4 minutes). While cooking cauliflower, assemble 1/8 to 1/4 cup milk, and any other ingredients you want (sour cream, cream cheese, molly mcbutter, salt, dill, cheddar cheese, olive oil, or anything else you'd want on mashed potatoes).

I put all my ingredients into the milk's measuring cup, and as soon as the cauliflower was cooked and soft, I dumped it and the toppings right into the blender. Blended for about 15 seconds (my blender is very strong - blend until your desired consistency, adding more or less liquid if you like your potatoes thicker or thinner). Serve and enjoy!!

My family loved this. I added fat free sour cream for a creamy taste. - 12/16/07

I really enjoyed this recipe. I didn't read all the instructions, and mashed it with a potato masher. My husband thought it would have been better if I had blended it, but I liked the coarse texture. I'll blend it next time. - 12/1/07

I used a whole head of cauliflower, 1/2 c of skim milk and 1/2c of reduced fat cheese with a good deal of pepper. DH and DS liked it but griped that it was not "real" - 11/26/07

I loved this recipe! So glad I found it! Just be careful not to add too much milk or it will get soupy and for those who think it is flavorless I added a little cheese to give it a great taste (any cheese would do!) - 11/13/07

Flavorless. I like cauliflower, but this did nothing for it. - 9/9/07

My daughter and I love cauliflower but we didn't care for the dish, we prefer it more or less straight up. My son and husband took one bite but that's it. - 8/17/07

Delicious! I used plain yogurt instead of the sour cream, but will try it with sour cream next time. - 7/21/07

Make sure you follow these directions carefully... Not doing so will lead to more of a cauliflower soup... - 7/14/07

The flavor was great (I added some garlic powder too), but I did something wrong and ended up with chopped cauliflower swimming in a milky cheese sauce. - 7/14/07

Love this recipe. It's great with a sharp white cheddar cheese. The cheese is not low fat but since it is sharp you do not need much to really jazz up the cauliflower. - 7/2/07

Delicious! So easy, too! - 6/30/07

I love cauliflower, but really disliked this recipe. I could not eat it. Tasted like neither cauliflower nor mashed potatoes. Ugh! - 10/17/12

I had the highest of hopes for this with all the yummy ingredients. Don't know if I did something wrong, but it was a disaster. I ended up with a soupy, grainy, cauliflowery mush that looked nothing of mashed potatoes. I will try the faux mashed potatoes again, but not with this recipe. - 10/18/11

Yum-o! I used frozen cauliflower florets and my whole family enjoyed this! - 1/24/10

My family LOVED this recipe, even my picky, picky son. I added 1/3 cup of the sour cream though. Use a small cauliflower. I steamed mine to save vitamins. Definitely a keeper. Thank you! - 1/15/10

It scares me that people actually think this is healthy. Do some freaking research on nutrition people. Low fat dairy contains oxidized cholesterol which is really unhealthy and the butter spray and Molly Mcbutter have hydrogenated oils in them, which are poison. Wake up people! - 12/26/09

Fat is NOT the enemy! When made with full fat sour cream, real butter, cream cheese and cream I make 2 servings for only 4 net carbs. Yummy - 9/16/08

I will try! This is a healthy alternative to baked potato. - 6/30/07
