Banana bread

Ingredients
1 1/5 cups all purpose flour1 1/4 tsp baking powder1/2 tsp baking soda1/2 tsp ground cinnamon1/8 tsp salt2 slightly beaten egg whites1 cup mashed banana3/4 cup sugat1/4 cup cooking oilNonstick spray coating
Directions
In a medium mixing bowl str together flour, baking soda, cinnamon and salt.
In a large mixing bowl stir together egg whites, banana, sugar and oil. Stir flow mixture into banana mixture just till moistened.
Spray an 8x4x2 inch loaf pan with nonstick spray coating. Spread batter in prepared pan. Bake in a 350 oven for 45 to 50 min or till a toothpick inserted near the center comes out clean.
Cool bread in the pan for 10 min. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store evernight. Makes 1 loaf (16 servings)

    I used half splenda and half sugar and topped it with some grated brown sugar. Still a great reciepe! - 5/6/08

    Very good! I ended up making muffins instead of a loaf and they turned out great. I ended up using a little more cinnamon and also a bit of nutmeg. I'm high altitude so also added 2 tbsp more of flour with about 1.5 tsp of corn starch and used one whole egg with one egg white. - 3/24/08

    Great recipe. I put alitle more cinnamon in mine and used Splenda instead of sugar( few less calories!). I made muffins instead of bread. My family loved them! - 2/3/08
