Smoky Shrimp and Polenta

Ingredients
1 cup polenta1 cup grated low fat cheddar4 slices bacon1 lb raw shrimp2 plum tomatoes2 scallions
Directions
Cook 1 cup polenta according to directions; stir in 1 cup grated cheddar. in a skillet, brown 4 slices cut-up bacon over med-high heat. Add shrimp and 2 chopped plum tomatoes; cook until shrimp are opaque, 3-5 mins. Stir in sliced scallions. Serve over polenta.

    Made this for dinner tonight, my family loved it! I added half an orange bell pepper, half a red onion and used grape tomatoes instead of the plum tomatoes listed. - 9/18/13
