Ingredients
1 lb. of Chicken breast w/o skin5 cloves of garlic (minced or chopped)1 cup of raw onion (chopped)1 cup tomato sauce 3 fl oz. calamansi juice/lemon juice/lime juice2 tbsp of soy sauce1 tbsp butter1 tbsp fresh basil/dried basil (optional)1 tsp. ground black pepper corn1 tsp. salt (sea salt/rock salt) - use less or none if possible.
Directions
Procedure:
1. wash chicken pieces in cold running water and drain.
2. rub chicken with calamansi juice and soy sauce, then season with salt & pepper.
3. in a pot, melt butter over low heat and saute tomato sauce, onions and basil.
4. place the chicken in the pot, cover, and cook over low heat... *do not add water.* .. until the chicken becomes tender and the juices run clear when the chicken is pricked with a fork.
