Introduction

Quick and easy vegetarian patty that goes well with cottage cheese. It was so yummy even hubby liked it! Quick and easy vegetarian patty that goes well with cottage cheese. It was so yummy even hubby liked it!
Number of Servings: 2

Ingredients

    1 cup grated or mashed zucchini
    0.25 cup whole wheat flour
    0.25 cup part-skim mozzarella cheese
    4 tbsp grated parmesan cheese
    1 large egg
    2 tbsp onion
    1 tbsp garlic powder (to taste)
    1 tbsp extra virgin olive oil

Directions

1. In a medium bowl, combine zucchini, egg, onion, flour, parmesan cheese, mozzarella cheese and garlic powder.
2. Heat 1 tbsp oil in a skillet over medium-high heat. Drop zucchini mixture by patties and cook until each side is golden brown.
