Introduction

A great way to finish your spring mix salad before the expiry date.In fact you can use any type of green leafy vegetables.I tried it with spinach and it was delicious. Ingredients

    Spring mix salad 10 cup
    Onion raw 1 medium finely chopped
    Tomatoes 1 large finely chopped
    Garlic 5 cloves finely chopped
    Green chillies 4 or according to taste
    Olive oil 1 tsp
    Balsamic vinegar 1 tbsp
    Cornstarch 1 tbsp or 8 grams( to thicken the soup)
    Salt and pepper (As per taste)
    Water 10 cups (You can use broth ,if you like)


Directions

In a nonstick cook pan heat oil.Once heated, add the garlic and green chillies and cook for few seconds.Later on add onion and tomatoes and cook for few more mins.Later add the spring mix salad and let it wilt.Once wilted , add 10 cups of water .Blend it as fine as you can in a blender.Transfer it again in the cook pan ,add balsamic vinegar and cornstarch.Let it boil till the soup thickens .Once done ,add salt and pepper as per your taste .Done.Serve it with crackers.
