Slow-Cooker Salsa Chicken




Number of Servings: 6

Ingredients

    4 boneless, skinless chicken breasts
    1 cup salsa
    1 package reduced sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

Directions

Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.

NOTES:
You may use half the packet of taco seasoning (I have started doing this to reduce sodium content myself)

Some slow cookers cook faster than others. Mine is a true slow cooker (have had it over 10 years.) The newer ones cook a bit faster and you may have to adjust your cooking time based on that!

    I used my own "taco seasoning" mix, added black beans and used a spicy corn salsa. Came out rather well! Thank you for the idea!!! - 9/22/09

    I made it as written. Husband and Daughter raved about it. Definitely a keeper. I am going to try it with cream of chicken next time. Family was happy with the seasoning, but I think a bit more spice would be yummy. (I'll sneak some diced jalapenos in mine.) - 9/12/09

    OMG, made this for dinner tonight and it's a huge hit! Thank you for the great recipe....easy and tasty. I put a bed of thinly sliced romaine and iceberg lettuce and put my cup of chicken on top of it...sprinkled with a smidge of low fat cheddar and thin tortilla strips. - 3/5/12

    I made it with cream of chicken, black beans, and subbed greek yogurt for sour cream. I just made it in the skillet by covering the chicken in the taco seasoning then following the slow cooker recipe only I cooked it stove top for about 20 minutes. So good my husband literally licked the pan!!! - 11/18/10

  • I rarely cook because cooking for one to me is a bummer. However, since I'm trying to live a healthier lifestyle I am trying batch cooking. I made this pretty much as the recipe follows. I added a little more salsa. Anyhow FABULOUS! I am adding this to my favorites and will for sure make it again! - 10/29/10

  • Delicious! Thanks SO much for this recipe! My husband is the pickiest eater (and usually doesn't like healthy versions of meals), and I was able to sneak some health into his diet with this recipe! :) I grilled the chicken, cut it up, combined all ingredients, cooked on high for 3.5-4 hrs, + rice. - 9/27/10

    I am from a hispanic background, if you are expecting authentic mexican taste then this is not for you. It reminds me of a almost taco bell taste of chicken. We loved it even though is was not authentic. It was so easy to just throw in the crockpot in the morning and make burritos for dinner. - 2/11/10
