Introduction

These delicious and moist chocolate chip cookies require no eggs.

Number of Servings: 40

Ingredients

    1 cup Butter, soft or Margerine
    3/4 cup Brown Sugar, packed
    1/4 cup Granulated Sugar (White)
    1 tbsp Vanilla Extract
    1 1/2 cups Flour
    1/2 tsp Salt
    1 tsp Baking Soda
    1/4 cup Boiling Water
    2 cups Quick Oats
    1 cup Chocolate Chips
    ** Or split 1/2 cup each Choc Chips & Raisins

Directions

Preheat oven to 350F (175C).
In large bowl, beat butter or margerine, sugar and vanilla until light and fluffy.
Add flour and salt, mix well.
Dissolve baking soda in boiling water and add to mixture, mix well.
Stir in quick oats, raisins and/or chocolate.
Drop unto ungreased cookie sheet with teaspoon.
Bake for 10 minutes, until sides become golden. don't overcook.
Makes 3 dozen (Gave me 40 cookies).

    I thought they were very good . Gave most to my grandkids but they just got them. They were crisp . I did half with chocolate chips and half with butterscotch chips which is my favorite . Grands prefer chocolate everything.

    Incredible!
    Just to try this I cut this recipe in half and added coco powder as I didn’t have any chocolate chips. It amazed me how good they came out, they weren’t spreading so I mashed them down. They were good and chewy. - 4/9/19

    Very Good
    I used 1 tsp of vanilla vs the 1 TBSP in the recipe (typo?). & they taste fine. Light & crispy, not chewy though. - 1/29/13
