Introduction

I had a lot of trouble getting a no flour pizza crust to work. It kept sticking to my no-stick pan even when it was well oiled, and turned out soggy and limp. So I doctored it till it worked, but had to add whole wheat flour. Fine shredded Mozzarella is a MUST for this recipe. Don't use coarse shredded. Fine shredded cheese produces a more pleasant and consistent texture.
This is nothing like a real pizza crust. It's a bit spongy like an omelet and the browned areas are slightly chewy. If you can get past the texture it works well as a low carb pizza crust substitute.

Ingredients

    1 cup Cauliflower, raw and riced in a food processor (130 grams)
    1 Egg, large
    1 cup Mozzarella Cheese, whole milk, shredded fine
    1/4 cup Whole Wheat Flour
    1/2 tsp season salt

Directions

Combine riced cauliflower, egg, cheese, medium bowl. Strain mixture with a wire mesh strainer for a few miniutes to remove excess moisture (don't press into the strainer it will become too dry). Place mixture back into the mixing bowl and add salt and flour. Mix thoroughly.

Spoon batter onto a well oiled, non-stick cookie sheet. Press flat and even into a circular shape. Bake at 450 F for 10-15 minutes in the oven.
