Ingredients

    3 medium yams
    3 medium onions
    1 tbsp olive oil
    4 tbsp balsamic vinegar
    italian herbs or others to taste

Directions

Peel and cut 3 medium yams to bit size chunks, peel and cut 3 medium onions to bit size chunks. Toss into a 13" X 9" lasagna pan and sprinkle with 1 tbsp olive oil and 4 tbsp balsamic vinegar. Add italian herbs or others to taste. Roast in 400 degree oven until tender for approximately 30 minutes, mixing veggies once during roasting time. Makes 8 servings.

    Good
    I mixed in some fresh arugula. (See photo.) Turned out pretty good. My hubby has made a version of this dish for years, but I don't think he uses as much vinegar. I may have goofed & put too much vinegar, for the amount of yam. I used one large yam, and 2 tablespoons of vinegar, which was too much! - 3/4/12

    Incredible!
    Delicious! I served it over sauteed spinach and mushrooms. I think next time I will add red bell peppers to the yams and onions. I can't wait to eat the leftovers for lunch! - 2/3/08
