Introduction

A casserole classic made with low-fat /low-claorie ingredients. They are called funeral potatoes where I live because they are often made for funeral dinners. Ingredients

*1 26 oz Bag Frozen Hashbrowns
*1 Can Campbell's Healthy Request Cream of Chicken Soup
    *16 oz Light Sour Cream
*1/4 - 1/2 C. Chopped Onion (some recipes call for green onions as well)
    Salt & Pepper
    2 C. Low-Fat Cheddar Cheese
    2 C. Corn Flakes

Directions

Preheat oven to 350 degrees. Mix soup and sour cream together in a bowl. In a casserole dish or 12" x 9" cake pan, mix hashbrowns, 1 1/2 C. cheese, onions/green onions, salt and pepper as desired, and sour cream/soup mix together. Spread the mixture evenly in the pan. Crush corn flakes--I like to place the corn flakes in a sandwich baggie and crush them with a rolling pin. Sprinkle crushed corn flakes on top of hashbrown mix. Sprinkle remaining 1/2 C. cheese over corn flakes. Cover with aluminum foil and bake at 350 for 45 minutes.
