Number of Servings: 12

Ingredients

    1/2 C Shortening
    1 C Sugar
    1 Egg
    1 tsp Vanilla extract
    2 Ripe bananas
    1 C Cooked Oatmeal (or approx 2 packets of cooked plain oatmean packets)
    2 C Flour
    1 tsp Salt
    1/2 C Chocolate Chips
    1/2 C Chopped Walnuts (optional)

Directions

Makes 12 muffins
(Can be prepared in one bowl or stand mixer)

Preheat oven to 350. Grease or line muffin pan. In a large bowl cream together shortening, sugar, egg and vanilla. Add mashed banana and cooked oatmeal. (Note: make sure oatmeal has been cooled if recently cooked) Sift in flour, baking soda and salt. Stir just until dry ingredients are moistened. Stir in chocolate chips and nuts (optional). Spoon batter into prepared muffins cups.

Bake 22-25 minutes, or until done.

Cool on a wire rak for 10-15 minutes, then remove muffins from pan. Good served warm or cold.
