Introduction
This moist, slightly sweet, dark bread is a snap to make. The cornmeal gives it a lovely grainy texture. This bread proves once again that eggs are completely superfluous to most baked goods. Ingredients

1 cup cornmeal
1 cup whole wheat bread flour
1/2 cup all purpose flour
1 tsp baking soda
3/4 tsp salt
1 1/2 cups light, plain soy milk
1/2 cup molasses
1/4 cup B grade maple syrup
1 Tbsp cider or white vinegar
Directions
Preheat oven to 325 degrees.
Combine all the dry ingredients.
In separate bowl, combine the wet ingredients and stir well as the molasses tends to sink to the bottom.
Make a well in the center of the dry ingredients. Pour the wet in the well. Stir until just combined.
Pour into a lightly oiled 5"x9" bread loaf pan.
Bake one hour or until a toothpick stuck in the center comes out clean. Let sit for 10 minutes, then carefully remove from pan and let cool another 20 minutes before serving.
