this is a recipe that I cook a lot but never found, so I figured why not? Here it is, 'Tosca Reno's' clean eating pancakes. Ingredients

dry:
1 1/4 whole wheat flour
1 tsp baking power
2 tbsp brown suger
1/2 tsp ground cinnamon
1/4 tsp. sea salt
wet:
8 egg whites
1 cup fat free cottage cheese
1 cup fat free yogurt
Directions
combine the dry ingredients in a medium bowl, or whatever else you choose.
combine the egg whites, cottage cheese, and yogurt in another bowl, and pour over dry. stir until just moistened, or if your like me, until its mixed completly.
heat a non-stick pan or griddle with cooking spray. the heat is normally medium high, but whatever works best for whatever your using will be fine. (so long as they don't BURN!)
use around 1/2 a cup for each pankcake, and cook until lightly browned on both sides. if one side looks a little spoty, don't worry about it. i've never been able to cook both sides evenly, so hey. anyway, thats it. makes around 12 three inch pancakes, or if you spred the batter around just when you put it on, around five inches.
