Ingredients

    1 c grated carrot
    1 c grated zucchini
    1/4 c chopped onion
    1/2 tsp minced garlic
    2 Tbl dried parsley
    1/4 c flour
    1/4 tsp fresh ground pepper
    1/4 c egg substitute
    cooking spray

Directions

1. Combine all the ingredeints except the cooking spray in a large bowl and mix thoroughly.

2. Heat a large skillet over medium-high heat for 1-2 minutes until hot. Lightly coat with cooking spray.

3. Using a 1/4 cup measure, scoop out level cups of the vegetable mixture into the hot pan, spreading each pancake slightly.

4. Cook for 3 minutes (do not flip during this time). Spray the top of each pancake lightly with the cooking spray and then turn each pancake over. Continue cooking for another 3 minutes.

5. Remove the pancakes to a warming platter while you continue cooking the remaining pancake mixture.

6. Serve.

Makes 9 pancakes - 3 per serving

These are good plain, with a little low-fat sour cream or applesauce. (The sour cream and applesauce are not in the calorie calculation)

    I HATE veggies, but really like this recipe!!! Ate them with just a little spray butter on them! Imagine that, me eating veggies! Need to find more recipes like this one! Thank you for posting it!!! - 9/18/09

    These are delicious. I'm not a big carrot fan, but I love them cooked like this. I cooked the pancakes for longer on lower heat and then transferred to the oven at 350 degrees for a few minutes to make sure they were thoroughly cooked. They came out yummy. - 7/20/09

    I just made this for dinner along with a grilled turkey burger and it made for a wonderful side dish! I was cooking for one so I reduced the recipe by 1/3 and it came out great. Adding a pinch of cinnamon would sweeten it up for a different spin. Delicious, thanks so much. - 7/2/09
