Number of Servings: 8

Ingredients

    3/4c splenda
    15oz (1 can) pure pumplkin
    12oz (1 can) fat free evaporated milk
    1/2c egg whites
    2 tsp pumpkin pie spice

Directions

preheat oven to 350
combine all ingredients in a baking (casserole) dish and mix well
bake for 45 min
serve warm or cold!

    I was craving pumpkin pie tonight and this hit the spot!! I made it in a 9 X 9 pan and did the 9 servings instead of 8...Sooo good warm, can't wait to try some cold tomorrow! - 10/26/09

    you know, sometimes that happens to mine and sometimes it doesn't. i assume it's the water content in the pumpkin. perhaps a bit more egg whites, or even a little (dare i say) salt? i'll let you know if i figure out the trick! hope it tasted good anyways :-)
