I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 280 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings!

365 Minutes to Prepare and Cook



Ingredients

    1 4-pack Pillsbury Country Biscuits (red or blue pack)
    3 cans Swanson Natural Goodness Chicken Broth
    3 cans water
    1 can Healthy Request Cream of Chicken 98% Fat Free (this is also low sodium)
    1/2 cup skim milk
    4 Chicken Breast halves (frozen)

    Black pepper to taste


Directions

Makes about 10, 1 cup servings.


The 360 minutes of cooking time comes from using a crock pot to cook the chicken. (you don't have to do it this way)


In large pot (I use an 8qt.) Boil the chicken breasts in the chicken broth and water.


Remove the chicken when done and shred with 2 forks, add back to broth. Add cream of chicken soup and milk, then bring back to boil.
Cut the biscuits into smaller pieces(I use a pizza cutter) 4 or 6 per biscuit and stir gradually into boiling broth. Once all the biscuits are in the broth reduce heat and simmer about 25 minutes, stirring often.


Add black pepper as desired.


*Note to save some time before dinner you can also put the water, chicken and the chicken broth into the crockpot on low for 6 hours or so, then shred the chicken and put it and the remaining broth/water into a large pot. You may need too add more broth or water if it cooks out while in the crock pot.

thanks for this wonderful recipe. I add chopped celery, carrots and parsely to the broth and use msg free chicken boullion, poulty season, garlic, salt and pepper for the broth. Also tear dough into tiny pieces to cook through. It thickens the broth too. :)

I thought that the broth/chicken was tasty but the biscuits turned gummy and chewy. I think i would make it again but just use Heart Healthy Bisquick and drop them in to cook.

I was pleased with this recipe; however, I modified it by leaving out the water and adding more broth, celery, sweet onions, garlic, and cream of mushroom. Flatten the biscuits and cut them into tiny pieces, slightly larger than oyster crackers. There was no gumminess and the family loved it.

This recipe was very good! I did have trouble finding the buscuits and I was afraid to experiment with a different kind so I bought the ordinary buscuits and cooked them and served the chicken "mix" over top of it and it was a hit! My husband and two toddlers all had seconds...which is rare!!! GOOD!

I love chicken and dumpling and this is a great recipe. I have also used fat free tortila shells (Azteca are best) for the dumplings along with Campbell's Healthy Request cream of chicken and cream of celery soup and poultry seasoning

We all loved it, My picky 16 year old, and my husband who was born and raised in West Virgina(meaning he has eaten alot of chicken and dumplings. I made it a litte healthier by subing the bisciuts with dumplings made with Bisquick and fat free milk.

This was amazing! My boyfriend thought he was indulging on some high calorie, comfort food, when in reality we were eating healthy food! I used one box of the chicken broth instead of the three cans and didn't add any water, and it worked perfectly. I am totally making this again!

Chicken and Dumplings are my fav since child hood
although we make the biscuits from scratch...It is just as good with the buscuits already made.

OK, yuh-uhmmmm! I've never had chicken and dumplings before (not terribly popular in So Cal LOL), but my family and I loved it!! We'll be having this again soon! I added a bit of white pepper, garlic salt and regular salt, and I used my crockpot and didn't need to add more broth or water. Mmmm!

This was really tasty. I added frozen mixed veggies & used Bisquick Healthy Request for the dumplings. After reading above I made them VERY small and flat (they get bigger) It was perfect. Sons favorite, use to buy this from freezer section & make in the crockpot @ $6 a pop (I would need 2). GREAT!

I love this! I have always loved chicken and dumplings, and I this was a great recipe to follow!! Easy, inexpensive, and delicious! I did add fresh carrot, onion, and garlic as well as frozen peas and green giant mexican nibblet corn. I also added a half teaspoon of spicy brown mustard. Awesome!!

OMG!! I made this for dinner last night! absolutely amazing! I havent had chicken and dumplings since I was a kid. My grandma use to make them from scratch when I was a lil girl. This recipe brought back such sweet memories of childhood. My husband and picky 12 year old daughter LOVED it!!

We love this and make it all the time. We do add celery and carrots to the mix to add some vegetables to it. The smaller you cut up your biscuits the less likely they are to be gummy. Thanks!

This was so Yummy!! I did what a lot of the previous reviewers suggested and added carrots, potatoes and green beans. I also threw in about a half cup of fresh chopped parsley at the end. I think I doubled the broth part with just 1 part dumplings. All my kids were screaming for more!!

I haven't made this, but another (and even easier) way to lower sodium would be to use low sodium chicken broth. Regular broth is packed in the stuff! :) Looks good, I can't wait to try this!

Actually the Natural Goodness is Swanson's low sodium variety. If you know of a brand that has lower sodium go for it! The less sodium the better!

I agree with the other posts that the "dumplings" need to be smaller. Each biscuit should probably be cut in 8 to 10 pieces. I also added about a tablespoon of garlic powder. Will make again with peas, carrots and onions added. Very delish and EASY!!!!! My hubby and 2 year old LOVED it too!

instead of using a crock pot u could cut down on cooking time by cutting the chicken into small pieces and poaching it. they cook in about 3 mins. per batch. might take about 2 or 3 batches to use up all the chicken. but since ur shredding it anyway....

I use no salt for most of my cooking so if I made my own biscuits with no salt it would cut down on the sodium. I could also use low salt on cream of chicken. I'd add celery and onion to it. I would cut into 1/3 because I can't eat that much and don't like a lot of leftovers.

I've never liked, "Chicken and Dumplings", because I don't like the doughy biscuits. Several posters suggested using smaller pieces of dough to make the biscuits. Sounds like a plan to me. Thanks for the suggestion.

This was so easy and delicious!! I think next time I will cube the chicken instead of shread so that my kiddo will at least try it!! :-) This will become a regular at my house!

Very Good
I made this last night and it turned out great! I made it in very little time, used stove top instead. I also used reduced fat biscuits, added carrots and cut the chicken into cubes instead of shredding. And my whole family really liked it! (except my picky 4yr old lol)

My fiance and I loved this! I used a different type of biscuit because I couldn't find the ones listed in the recipe, and they didn't come out gummy at all. Yum! Will definitely make this again!

My Family LOVED this! I used lower sodium chicken broth and I used the Pillsbury reduced fat wheat biscuits and cut them up in small pieces! Oh my goodness, it was awesome! Thank you, will be a regular in my house!

What I like best about this recipe is that you can start with frozen chicken, so I can make this with not much planning & a few ingredients that I'll try to always have on hand. I agree that the biscuits were gummy. I'd prefer a little more firmness so next time I'll bake the biscuits separately.

Thanks for the recipe!! It is great, I added some corn to mine also!! I cut the biscuits smaller so they wouldn't be gummy after reading some of the comments!! Will make this over and over!!
