Ingredients


    * Beans, black, 4 cup (remove)
    * Beans, red kidney, 2 cup (remove)
    * Green Peppers (bell peppers), 1 cup, chopped (remove)
    * Peppers, sweet, red, raw, sliced, 1 cup (remove)
    * Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove)
    * *365 Organic Diced Tomatoes, 3 cup (remove)
    * *Cumin seed, 1 tbsp (remove)
    * Chili powder, 1 tbsp (remove)
    * Garlic, 3 cloves (remove)
    * Onions, raw, 1 large (remove)
    * Oregano, ground, 1 tsp (remove)
    * Pepper, black, 1 tsp (remove)

Directions

Sautee diced peppers 5 mins. Add diced onion, sautee 2 mins. Add chopped garlic, sautee 1 min more. Add beans, drained, rinsed if you prefer. Add seasonings to beans and cook over medium heat 5 mins or so. Add tomatoes, stir and simmer 30 mins. Check seasonings and water level (add water if necessary) and continue to cook for a total of an hour (or more- the longer, the more the seasonings will blend). Serve topped with grated cheese (not included in stats) over rice or quinoa, or with cornbread on the side.
