Chicken Breast, no skin, 6 ounces Bread crumbs, dry, grated, plain, .25 cup Coconut Milk, 3 tbsp Coconut, raw, .25 cup, shredded Cooking Spray Hot Pepper Sauce, 2 tsp Flour, white, .25 cup Water, tap, 1 fl oz
Cut chicken breast into strips about 1 1/2 inches. Mix together coconut milk, hot sauce and water. In a separate bowl, mix together coconut and breadcrumbs. Dredge chicken in flour, dip in liquid mixture, dip in flour again, dip in liquid again, then roll in breadcrumb mixture. Line a baking sheet with parchment paper and lay chicken strips on the baking sheet. Spray with cooking spray, bake at 425 until coating is crisp and chicken is cooked through, about 20 - 25 minutes. Makes 2 3-oz servings.
