Roasted Sweet Potato and Apple Hash

1 med. sweet potato, peeled and cubed1med. granny smith apple, peeled, cored and cubed1 pinch cayenne pepper1 pinch cumin1 pinch cinnamonsalt1/4 tspn liquid smoke (optional)2 tspns canola oil
Pre heat oven to 350 degrees
Toss diced sweet potatoes in an oven proof sauce pan with 2 tspns canola oil, agave syrup, cumin, cinnamon and salt and pepper.
Roast in oven until potatoes are fork tender, about 10 minutes. Add the apples to mixture and return to oven for about 10 minutes. At that point, if you choose, sprinkle liquid smoke over mixture and return to oven for 5 more minutes. Makes two servings.
